Vinification
The 2017 viticultural year was marked by a dry winter, with rainfall levels much lower than the average of the last 30 years. A hot and dry spring followed, with heat waves that lasted until the beginning of summer. With the rise in average temperatures and the absence of precipitation, the vine showed an advance in phenology of about 15 days, from bud break to Pintor.
The harvest started in the last days of August. After refrigerated transport, the grapes were selected at the entrance to the cellar, followed by a gentle pressing. The must was decanted for 48 hours using partial oxidation. Fermentation took place in stainless steel vats by spontaneous fermentation followed by malolactic fermentation in Chardonnay in old French oak half-pipes.
Aging in total lees for 16 months.
Test results
Light yellow color and crystalline appearance. The profile is fresh and with citrus notes and where the strong aromas of orchard fruit stand out, exalting a mineral and lactic trace, as well as some suggestion of pastry…
Enveloping mouth, very fresh and mineral, ends with a structured, long and dry finish.
